I love you. Especially when you smell like cinnamon, ginger, and cardamom and have goji berries, pecans, and coconut in every bite. You barely have any sugar but your sure make my morning or snack or dessert that much sweeter. I'll never stray to your boxed counterparts in the breakfast aisle.

Spiced Granola with Goji Berries
Yield: about 6 cups
3 cups rolled oats (gluten free if desired)
1 cup raw pumpkin seeds
1 cup raw pecans, coarsely chopped
½ cup sesame seeds
1 cup unsweetened coconut flakes
½ teaspoon sea salt
1 teaspoon cinnamon
½ teaspoon ginger
½ teaspoon cardamom
1/3 cup maple syrup*
1/3 cup extra-virgin olive oil
1 teaspoon vanilla extract
½ cup goji berries
- Preheat oven to 300F. Combine rolled oats, pumpkin seeds, pecans, sesame seeds, coconut flakes, sea salt, cinnamon, ginger, and cardamom in a mixing bowl. Stir in the maple syrup, olive oil, and vanilla. Make sure all dry ingredients are evenly coated.
- Spread mixture onto two parchment-lined baking sheets and bake for about 30 minutes, stirring every 10 minutes to prevent the edges from burning. Granola is done when golden and fragrant. It will crisp up as it cools.
*This recipe yields a granola that is not very sweet - perfect for guilt-free consumption morning, noon, or night. If you prefer a sweeter granola, increase the maple syrup to ½ cup.
